Florentino means 'of or from Florence (Florencia).' As an adjective it agrees in gender (florentina). In culinary Spanish, a la florentina describes dishes prepared with spinach, a convention borrowed from French cuisine that originates from the legend of Catherine de Medici bringing the vegetable to France.
