Sazón is the cook's secret: it refers to the precise balance of salt, spice, and seasoning that makes a dish taste just right, not merely to individual condiments. In many Latin American kitchens, tener sazón means having a natural gift for cooking — the phrase cannot be reduced to just 'knowing recipes'. In Spain the word also retains its older sense of 'point of ripeness' for fruit, a usage less common in Latin America.
