Famoso agrees in gender and number: famosa, famosos, famosas. It is used with ser (not estar), since fame is seen as a defining characteristic rather than a temporary state. In informal speech, los famosos functions as a noun meaning 'celebrities'. Do not confuse with renombrado ('renowned'), which carries a more formal or literary tone.
