Postre is always masculine (el postre). The phrase de postre means 'for dessert'. Do not confuse with postal or poste ('post, pole'). In Spain the most common everyday postre is yogurt or fruit; the word itself is not restricted to elaborate sweets. The expression a la postre (literary/formal) means 'in the end, ultimately'.
