Oliva refers to the olive fruit or the olive tree (also olivo for the tree, oliva for the fruit or a poetic/archaic name for the tree). In culinary contexts aceituna is the more common everyday word for the olive fruit, while oliva is slightly more formal or literary. Aceite de oliva (olive oil) is the standard phrase regardless.
