Convertir is stem-changing (e→ie in the present: convierto, conviertes, convierte) and takes en to express what something is turned into: convertir agua en vino. The reflexive convertirse en means 'to become' something different in nature, while volverse is used for a change in state or character. Convertir is also used for religious conversion.
