Rapidez is an abstract noun (from rápido) denoting the quality of being fast, so it cannot be counted: you say con rapidez ('quickly', 'with speed') rather than 'a rapidez.' The -z ending changes to -c before -es in the plural (rapideces), though the word is rarely used in the plural. Compare velocidad, which is more measurable and technical.
