Lomo refers to the back or loin of an animal and is one of the most prized cuts of meat in Spanish cooking — lomo ibérico is a celebrated cured pork loin. It also means the spine of a book (el lomo del libro). In Argentina and Uruguay, lomo is the standard word for a beef tenderloin steak.
