Espárrago is masculine and its accent on the antepenultimate syllable makes it esdrújulo (proparoxytone). The plural espárragos keeps the accent. Spain prizes white asparagus (espárrago blanco) from Navarra, a recognised delicacy, while green asparagus (espárrago verde) is the everyday kind.
