Usage Note

Anchoa refers to the small saltwater fish (Engraulis encrasicolus) and especially to its salted or canned preparation. In Spain a distinction is often made between anchoas (salt-cured, darker, intense) and boquerones (fresh or vinegar-marinated, white). Outside Spain the distinction is less observed; the word is feminine.
