Usage Note
Manchego most famously describes the hard sheep's-milk cheese (queso manchego) from the La Mancha region of central Spain; as an adjective it agrees in gender and number (manchega, manchegos). The word is also a demonym for people from La Mancha, the same region Don Quixote roams.
