Usage Note

Azafrán is the world's most expensive spice by weight, and it is central to paella valenciana and other iconic Spanish dishes. The written accent on the final syllable marks the stress. Its vivid yellow-orange colour has also given rise to the adjective azafranado ('saffron-coloured'), though this is less common.
